Santiago Patiño
Santiago Patiño is a third-generation coffee grower who now owns his family farm El Ocaso. This 30-hectare plot is found in the region of Salento at an altitude of 1850MASL. The farm and family history of the Patiño is one of constant improvement and dedication to specialty coffee. With a history of over 20years of experimentally processing and championing new and interesting varieties such as SL28, Sidra, Tabi and Papayo all being grown on the farm.
This coffee is harvested following strict ripeness criteria, floated and handsorted to remove any defects. Cherries were then exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed and then dried in temperature controlled conditions until ideal moisture content was achieved. This micro-lot is 100% Tabi. This is a new variety developed by “Federacion Nacional de Cafeteros.” This unique variety is a cross between the Timor Hybrid, Bourbon, and Typica. Making it an extremely flavourful variety and highly resilient to climate fluctuation and lower rainfall conditions.
