In 2018, Iván Gerardo Solís Rivera started the Cafe Solis & Cordero project with his family and founded a dry mill. Based on over 20 years of experience in all things coffee, the micromill was established to support smallholders in the Santos region.
For these smallerholders working with Solis & Cordero, this mill allows them to differentiate their coffee by showcasing the farm level traceability while also using new innovation on processing methods. The mill offers a variety of services including cherry processing, selling specialty grade coffee internationally, and selling roasted coffee in Costa Rice. They also provide consulting services on processing, quality control, and export services.
This Caturra Catuai lot is selectively picked before being taken to the micromill for processing. This is fermented in sealed containers creating an anaerobic fermentation for 108 hours. After which the coffee is laid on raised beds to dry.
