Antonio Araúz

La Estrella is a traditional coffee farm with a history dating back to 1951, in the hands of the Araúz family. When Don Ignacio Araúz passed away the farm was left in the hands of his children. Mr Antonio Araúz is now running and progressing the farm on behalf of the family. Since 2019, about 60% of the seedlings have been renewed for healthy growth of coffee trees, with varieties such as parainema, obatá, Costa Rica 95 and caturra.

The 105 hectares of land is located 15km from the city of Matagalpa and has a micro-climate cocooned by the mountains and natural shade coverage, working together in harmony to provide a stable temperature and humidity near the soils.

La Estrella has a long term connection with the community that has proven to be an important source of employment, due to the labour force being a great challenge from the tobacco and mining industries. The preparation process for this lot begins with a good selection of lots with homogeneous ripening, which is why the flowering period is controlled to allow for the highest harvest peaks. The personnel who harvest the coffee are trained to select only the ripe cherries, and a subsequent selection is made by eliminating any green or dry cherries that have passed. It is this careful consideration of picking that results in a greater consistency of processing, which leads to a higher quality cup profile for roasters and consumers to enjoy.
