On the farm, they have some beautiful shade trees such as Guamo, Guayacan, Gualandai, and Nogal.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eSebastián , along with his team of pickers, harvests only the ripest cherries. Then, the cherries \u003c\/span\u003e\u003cspan\u003eare placed in the sorting area at La Divisa farm, where the sorting team hand-sorts and floats \u003c\/span\u003e\u003cspan\u003ethem to remove any low-density, underripe, or defective cherries.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eOnce sorted, the coffee cherries are packaged in grain pro bags and transported to  La Pradera, a processing center. Once at La Pradera, we continue with our quality protocols of \u003c\/span\u003e\u003cspan\u003esorting. We start by placing coffee cherries in water tanks to float them and to remove any \u003c\/span\u003e\u003cspan\u003elow-density beans and external material.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eAfterwards, the cherries undergo a 30-hour underwater fermentation—a critical step that \u003c\/span\u003e\u003cspan\u003eenhances the coffee's flavor profile. We do this controlled fermentation process as it allows the \u003c\/span\u003e\u003cspan\u003esugars, organic acids, and other compounds within the cherries to break down gradually, \u003c\/span\u003e\u003cspan\u003estimulating the development of a delicate yet interesting profile.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eAfter fermentation, the cherries are pulped, and the mucilage is thoroughly washed away.
