Prakash Balaraman — Carbonic Maceration
Carbonic Maceration is a unique process where cherries with higher sugar content are carefully selected to be placed into purpose-built stainless steel tanks. Here the introduction of CO2 gas flushes out the oxygen and allows the fermentation to take place for a longer amount of time. Yeast typically used for white wine is introduced to accentuate the sparkling mouth feel this coffee has.
Once the fermentation is complete, the cherries are slowly dried in raised beds to remove excess moisture with improved air circulation for even drying beds as well as on a patio for a period of 40 days. Resulting in this beautiful coffee.
