The processing team utilises special processing techniques as a means to elevate the inherent qualities of the beans. With this guiding principle, they meticulously select fully ripe coffee cherries from high-altitude regions, situated between 1,300m to 1,500m in Mangshi, Dehong, as they are renowned for their exceptional attributes.
To seamlessly integrate nature and innovation, Project One Light conducts the fermentation under strict conditions then places the beans on sun-drying shelves, allowing the various elements to weave their magic over the course of two weeks.
